Raw Cauliflower Salad with Red Pepper, Goat Cheese, Vinaigrette

1 large organic cauliflower
1 1/2 cups organic shredded carrots
1/4 cup crumbled goat cheese
1/2 a large organic red bell pepper cut into chunks
2 large shallots peeled and cut in half
1/2 cup olive oil
1/3 cup fresh squeezed lemon juice
1 Tbsp ACV organic apple cider vinegar
Two probiotic capsules
1 tsp Himalayan Pink salt
1/2 tsp fresh ground tri color or blended peppercorns
2 Tbsp goat cheese
Rinse cauliflower and shake off excess water, core and put the florets on cutting board. Use core for juicing or throw in compost pile.
Start slicing cauliflower with a sharp good knife and make slices.
Set in bowl, carry the slices over with a flat spatula makes it easier. Add shredded carrots and crumbled goat cheese.
In food processor, pulse shallots until chopped, add cut up red pepper and pulse to chop finely. Add olive oil, lemon juice and apple cider vinegar to food processor. Also add 2 tbsp goat cheese and open up probiotic capsules by twisting and puling it apart into the dressing. (This really helps with digestion and flatulence) Discard gelatin capsules. Pulse a couple of times, pour over cauliflower in salad bowl. Mix, toss salad gently, so cauliflower is well coated with dressing and taste for seasoning.
